Kalbsfond angießen, alles mit Salz, Pfeffer und Muskatnuss würzen und bei geringer Hitze 10 bis 20 Minuten garen. Das Fleisch innen und aussen mit Salz, Pfeffer und Paprika würzen und mit je einer Scheibe Schinken und Käse füllen. Die Schnitzel in Mehl wenden, durch das Ei ziehen und dann in den Bröseln wälzen. Die Panade rundrum gut andrücken. Butter zerlassen und die Cordon bleus darin auf beiden Seiten in 3 bis 4 Minuten knusprig braun braten.
