Einmal bei voller <br />Hitzezufuhr kräftig aufkochen lassen, dann die Hitze sofort reduzieren, <br />so dass das Fleisch nur noch leicht simmert. Nach 40 Minuten den Herd <br />ausschalten und das Fleisch im Sud vollständig abkühlen lassen. Danach <br />das Fleisch aus der Brühe heben (Küchengarn entfernen) und sehr straff <br />in Frischhaltefolie einrollen. Thunfisch und Kapern abtropfen lassen. Danach die <br />Kapern, die Sardellen und den Thunfisch mit einem Stabmixer fein <br />pürieren, dabei 1-2 EL von der Brühe hinzugeben, bis ein crèmiges, <br />dickliches Püree entstanden ist. Das Thunfischpüree mit der Mayonnaise <br />gründlich vermischen und je nach Vorliebe mit etwas Sherry oder Cognac, <br />Salz und Pfeffer abschmecken. Achten Sie darauf, dass die Sauce nicht zu<br /> dünnflüssig oder gar wässrig wird! Letztlich ist das Geschmackssache. Persönlich bevorzuge ich die puristische Variante mit ein paar Kapern und frittierten Kapernäpfeln, vielleicht noch etwas Schnittlauch und Kräuter, aber mehr nicht.</span></div></li></ul></div></div>
