Mit dem Saft einer<br /> halben Zitrone beträufeln und kurz einziehen lassen. Dann auf jedes <br />Seezungenfilet eine Scheibe geräucherten Lachs legen, die Filets <br />aufrollen und mit Zahnstochern fixieren. Die Fischröllchen aufrecht <br />nebeneinander in einem Teflon beschichteten Topf anrichten und die <br />Röllchen vorsichtig dünsten. Die Garzeit hängt davon ab, wie dick die <br />Röllchen sind. Zum „Schmieren“ ruhig etwas Weißwein zugeben.</span></div></li><li id="wprm-recipe-4116-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Sauce das Eigelb mit der Sahne gut verquirlen. Pfeffer und Salz <br />zugeben. Unter ständigem Rühren zum Kochen bringen, sofort vom Herd <br />nehmen und langsam rührend den Champagner zugeben. Nochmals kurz bis <br />fast zum Kochen erhitzen, vom Herd nehmen, mit Zitronensaft abschmecken <br />und gehackten Dill unterheben.</span></div></li><li id="wprm-recipe-4116-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Angerichtet werden jeweils zwei Seezungenröllchen auf einem Teller und <br />oben mit jeweils einem halben Teelöffel Kaviar verziert. Das Wasser bei mittlerer Hitze zum Kochen <br />bringen. Den Deckel während des gesamten Kochprozesses nicht abheben. <br />Sobald das Wasser kocht, die Hitze herunter schalten und den Reis 3 min.<br /> kochen lassen. Auf niedrige Temperatur herunter schalten und den Reis <br />weitere 5 Min. kochen lassen. Dann die Herdplatte ausschalten und den <br />Reis weitere 5-10 Min. garen. Von der Kochstelle nehmen und den Deckel <br />öffnen. Es sollte nun kein Wasser mehr vorhanden sein. <br /> Nun den Sake<br /> hinzufügen und den Topf mit einem Küchentuch abdecken und den Deckel <br />wieder auflegen. So den Reis noch 10-15 Minuten ausquellen lassen. <br /><br /></span></div></li><li id="wprm-recipe-619-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;"><br /> In der Zwischenzeit den Reisessig mit dem Salz in einen kleinen <br />Topf geben und auf dem Herd bei schwacher Hitze erwärmen, dabei solange <br />rühren, bis des Salz sich aufgelöst hat. Den Zucker dazu geben und <br />weiter rühren, bis sich auch der Zucker aufgelöst hat. Die Mischung darf<br /> dabei nicht kochen. <br /><br /></span></div></li><li id="wprm-recipe-619-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Nun den fertig gegarten Reis in eine flache Schale aus Holz oder Plastik<br /> geben. Den Reis gleichmäßig mit einem Holzspatel verteilen. In die <br />Mitte eine Mulde machen und da hinein den Würzsud geben. Nun den Würzsud<br /> mit dem Holzspatel vorsichtig unter den Reis mischen, die Reiskörner <br />müssen dabei ganz bleiben. Den Reis auf Körpertemperatur abkühlen <br />lassen. Reis warm halten und mit einem feuchten Tuch abdecken und ein <br />Deckel auflegen. Nun kann der Reis für Sushi verwendet werden. <br /><br /></span></div></li><li id="wprm-recipe-619-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für das Apfelsushi benötigt man Räucherlachs, der sehr klein gehackt <br />sein muss. Ein Drittel davon wird mit etwas Wasabi unter den Reis <br />gemischt. Nun nimmt man eine walnussgroße Portion Reis in die <br />angefeuchtete Hand und formt sie zu einer Kugel und legt den Lachs <br />sorgfältig über die Kugel. Mit den Händen solange formen, bis man von <br />dem Reis nichts mehr sieht. <br /><br /></span></div></li><li id="wprm-recipe-619-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Das Gurkenstück auf einer Arbeitsfläche hin und her rollen, dann mit <br />einem scharfen Messer die Schale dünn abschälen. Für den Stiel <br />gleichlange Stücke schneiden und oben in das Sushi stecken. Aus dem Rest<br /> Blätter schnitzen und neben den Stiel auf das Sushi legen, so dass es <br />wie ein Apfel mit Blatt aussieht.<br /><br /></span></div></li></ul></div></div>
